Daring Bakers May 2015 - Lamingtons / Čupavci

It's been awhile since I participate in Daring Bakers Challenge. This month I decided I have to enter no matter what. And the challenge was great! Although lamingtons (here called čupavci) are really often made here in this part of the world and everybody will tell you that it's their favorite childhood treat, for me it's not that case. My mother don't like coconut and she simply don't make coconut cakes. So the lamingtons in my house are started to make when I began to cook. At one time I used to make it quite often, but then simple I forgot about them. The challenge Marcellina in cucina gave was great for me, but I decided to step out of my comfort zone and try something different. The result was great! For the sponge cake I used Marcellina recipe, but then I sandwich them with my homemade strawberry jam and coat them in white chocolate ganache made with coconut milk. The idea came by itself, since by the time I thought how to make lamingtons, my jam was on the stove and when I enter the pantry to grab jars for jam, there it was a can of coconut milk. If you don't like white chocolate use dark. You wan't use all of the jam from the recipe for the lamingtons, of course but I'm pretty sure you will find some other way to use it.

Ingredients for the sponge:

  • 5 eggs
  • 225gr sugar
  • a pinch of salt
  • 150gr cornflour
  • 50gr plain flour
  • 1,5 tsp baking powder
for the jam:

  • 1kg chopped fresh strawberries
  • 500gr sugar
  • juice from half a lemon
for the chocolate icing:
  • 200ml coconut milk
  • 200gr white chocolate
  • about 150gr shredded coconut 
Directions:
First make the jam. Combine the strawberries with the sugar and leave on a room temperature a couple of hours or in a fridge overnight.Add the lemon juice and bring to a boil. Cook over a high heat for 10-15'. Divide it between sterilized jars.
Preheat the oven to 180C. Line a 23x33xm pan with parchment paper.
Whisk the eggs and sugar until the mixture is pale and triple in volume, for 10'. Sift both flours, salt and baking powder over the egg mixture and carefully fold it in. Spread the mixture into prepared pan and smooth the surface. Bake for 20-25'. Immediately take the baked cake from the pan and transfer to a wire rack to cool. Cut the sponge in 5x5cm squares and then cut horizontally each square. Sandwich them together using a jam, then dip each part in chocolate icing and roll in coconut.
For the chocolate icing, combine the coconut milk and chopped white chocolate in a saucepan and warm it up over a middle high heat to melt. 



Čupavci

Potrebno za koru:
  • 5 jaja
  • 225gr šećera
  • prstohvat soli
  • 150gr gustina
  • 50gr brašna
  • 1,5 kašičica praška za pecivo
za džem:
  • 1 kg iseckanih jagoda
  • 500gr šećera
  • sok od pola limuna
za preliv:
  • 200ml kokosovog mleka
  • 200gr bele čokolade
  • oko 150gr kokosa
Priprema:
Prvo pripremite džem. Ubacite u šerpu jagode i šećer i ostavite na sobnoj temperaturi nekoliko sat ili u frižideru preko noći. Dodajte sok od limuna i dovedite do ključanja. Kuvajte na jakoj vatri oko 10-15'. Sipajte u sterilisane tegle.
Zagrejte rernu na 180C. Pleh dimenzija 23x33cm obložite papirom za pečenje.
Penasto umutiti jaja i šećer, tako da masa postane bleda i vidno naraste, oko 10'. Preko toga prosejte gustin, brašno, so i prašak za pecivo i lagano promešajte. Sipajte u pleh i poravnajte. Pecite oko 20-25'. Pečen kolač izvadite iz pleha i skroz ohladite. Ohlađenu koru isecite na kocke 5x5cm, a zatim svaku kocku prepolovite horizontalno. Premažite jedan deo džemom i poklopite drugim delom. Ubacite jednu po jednu kocku u preliv od čokolade, pa uvaljajte u kokos.
Za preliv, u šerpu stavite kokosovo mleko i usitnjenu čokoladu i zagrevajte na srednjoj temperaturi da se čokolada istopi i sve sjedini.

Cheesecake sa belom čokoladom / White Chocolate Cheesecake

Ako volite cheesecake kao ja, bićete mi zahvalni na ovom receptu. Ne samo što je savršeno kremast, nego je i bez pečenja. Samo se umuti i dobro ohladi i to je sve!

Cheesecake sa belom čokoladom

Potrebno za koru:

  • 150gr mlevenog keksa
  • 60gr istopljenog maslaca
za fil:
  • 300gr bele čokolade (najbolje moguće)
  • 400gr krem sira
  • 150gr milerama
  • 1 kašičica vanile*
Priprema:
Pomešati keks i maslac i utisnuti u pleh prečnika 22-24cm. Staviti u frižider da se hladi dok pripremate fil
Istopite belu čokoladu (u mikrotalasnoj ili na pari). Ostavite je da se malo prohladi. Umutitte krem sir i mileram (žicom, ne treba vam mikser). Dodajte čokoladu i vanilu, lagano promešajte i sipajte preko kore. Dobro ohladite, najbolje preko noći.

* Ja koristim pastu od vanile, koju nabavljam iz inostranstva, a ako je nemam domaći ekstrakt od vanile koji sama spremam. Ako nemate ni jedno ni drugo, stavite vanilu koju koristite.

White Chocolate Cheesecake

Ingredients for the base:
  • 150gr ground biscuits
  • 60gr melted butter
for the filling:
  • 300gr best possible white chocolate
  • 400gr cream cheese
  • 150gr crème fraiche
  • 1 tsp vanilla*
Directions:
Mix the ground biscuits and butter and press the mixture into a 22-24cm round pan. Chill until you prepare the filling. Melt the white chocolate (in a microwave or in a double-boiler). Cool slightly. Whisk the cream cheese and crème fraiche. Add the chocolate and vanilla, mix gently and pour over the base. Chill well, preferably overnight.

* In my case vanilla paste or homemade vanilla essence.

Kokos truffles / Coconut Truffles

Ne-ljubitelji kokosa baš nemaju sreće sa mojim poslednjim receptima. Prvo smo imali rafaelo tortu, a sada kokos truffles. Jedan od mojih omiljenih sitnih kolačića. Nežna bela čokolada sa kokosom i kokosovim mlekom...

Potrebno za kokosovo mleko*:

  • 60gr kokosa
  • 1 šolja vrele vode
za truffles:
  • od 60-80gr kokosa
  • 200gr bele čokolade (najkvalitetnije)*
  • 1 kašika maslaca
i jos:
  • kokos za valjanje
Priprema:
Za kokosovo mleko, u seckalici, multipraktiku ili blenderu pomešajte kokos i vodu i ostavite par minuta. Izblendirajte, a zatim procedite kroz gustu gazu. 
Za truffle vam treba otrpilike 100ml kokosovog mleka. Ako dobijete više, slobodno stavite, a posle povećajte količinu kokosa.
Pomešajte kokosovo mleko, kokos, usitnjenu čokoladu i maslac i stavite na srednju vatru da se sve istopi i izjednači. Ne sme da proključa. Sklonite sa vatre, ohladite u stavite u frizider na minimum 4 sata. Nakon toga, izvadite masu i ako ste stavili više mleka i procenite da se masa neće stisnuti, dodajte još kokosa.
Oblikujte male bombice koje uvaljate u kokos. Držite ih u frižideru, mada ih ja više volim na sobnoj temperaturi.

*Naravno da možete koristiti i kupovno gotovo kokosovo mleko
*Najbitnije u celom receptu je dobra čokolada. Ne kupujte nikakve šećerne table ili nešto na meru. Kolačići zahtevaju jako malo, osim kokosa, samo još i čokoladu, pa se potrudite da bude najbolja moguća.

Coconut Truffles

Ingredients for the coconut milk*:
  • 60gr coconut flakes
  • 1 cup of hot water
for the truffles:
  • 60 - 80gr coconut flakes
  • 200gr white chocolate (the best possible)*
  • 1 tbsp butter
and :
  • coconut for rolling
Directions:
For the coconut milk, put the coconut flakes and water in a blender and let stand for a couple of minutes. Blend and then strain it trough a thick gauze.
For the truffles you will need about 100ml of coconut milk. But if you have made some more, put it all, just increase the amount of coconut later.
Mix the milk, coconut flakes, chopped chocolate and butter in a saucepan. Heat over a middle high heat until everything is melted. Do not let it boils. Remove from the heat, cool and chill for at least 4 hours. After that, take it out from the fridge and if it is still too runny add some more coconut. Shape it into a small balls and roll into a coconut. Keep them in a fridge, although I prefer them on a room temperature.

* Or use store bought.
* Use the best possible chocolate you can find.

FBI Rukavice - What's for dessert?

FBI Rukavice su ovoga puta kod Tamare u gostima. Njen blog What's for dessert? je jedan od mojih omiljenih. I ja ću ponoviti kao i svi da vas ne prevari ime njenog bloga. Osim poslastica, Tamara je odlična i u spremanju slanih jela. Jednom prilikom dok smo četovale, rekla mi je da sprema ručak. Na moje pitanje šta sprema, nabrojala mi je takav spisak jela koji je kod mene za Božić i Uskrs. I još mi je rekla da je to kod nje uobičajeno :) Znači, Tamara uživa u kuvanju i to radi iz srca.
Spisak stvari koje bih probala sa njenog bloga je veliki. Već sam vam jednom prilikom pokazala njen Kinder Pingui u mojoj izvedbi, a ovoga puta sam se odlučila na ovo...

Slane ružice

Jedva čekam priliku da koristim moj kalup za mini mafine. Volim te male zalogajčiće. Tamarine ružice se super brzo spremaju, ukusne su i vrlo izdašne (od ove mase dobila sam 48 mini mafina). Odlični su uz kečap, a drugi put kada sam ih pravila poslužila sam ih i uz tartar sos, koji se možda čak i bolje slaže.

Nisam ga pravila 100 godina, ni sama ne znam zašto, kada je to poslastica koja se svima sviđa. Tamarin recept je bez greške, savršen...

Mafini sa malinama i makom

Kada imate decu, mafini su jako zahvalna stvar. Pošto je mak jedna od namirnica koja je kod mene kući rado prihvaćena, ovi mafini su nestali brzinom svetlosti. Jedina izmena je što nisam koristila mleveni mak, više ga volimo u zrnu.

Krema s kupinama i maskarponeom

Kod mene sa šumskim voćem. Ove zime imam strašnu potrebu za šumskim voćem. Ova krema je bila kao savršena za mene. Lagana, osvežavajuća...

Raspuknuti keksići

E ovde sam malo zeznula stvar. Zaboravila sam da keksiće prvo uvaljam u kristal šećer, pa su upile sav šećer u prahu i nisu onako lepo raspuknuti kao kod Tamare. Bez obzira to nije ništa uticalo na ukus, koji je odličan. Keksići su prava zaraza...

I za kraj, da rezimiramo. Tamarini recepti su probrani, provereni, precizni i bez ikakve mane. Za koji god da se odlučite, nećete pogrešiti....

Sneško i irvas od krofnica / Doughnuts Snowman and Reindeer

Kalup za pečene krofnice ponovo u akciji!

Sneško i irvas od krofnica

Potrebno:

  • 130gr brašna
  • 70gr šećera
  • 1 kašičica praška za pecivo
  • 1/4 kašičice sode
  • prstohvat soli
  • 80ml mleka
  • 4 kašike grčkog jogurta
  • 1 jaje
  • 2 kašike ulja
  • vanila
  • maslac za podmazivanje kalupa
  • bela i crna čokolada
  • M & M bombone, perece
Priprema:
Zagrejte rernu na 180C . Podmažite dva kalupa za mini krofnice.
Pomešajte brašno, šećer, prašak za pecivo, sodu i so.
Posebno umutite mleko, jogurt, jaje, ulje i vanilu. Dodajte mokre sastojke u suve i promešajte. Rasporedite masu u kalupe i pecite oko 8-10'. Izvadite krofnice iz kalupa i ohladite.
Istopite posebno belu i crnu čokoladu. Umačite krofne u čokolade i ostavite da se stegne. Od crne čokolade napravite oči i usta i ukrasite bombonama i perecama.

Doughnuts Snowman and Reindeer

Ingredients:
  • 130gr flour
  • 70gr sugar
  • 1 tsp baking powder
  • 1/4 baking soda
  • a pinch of salt
  • 80ml milk
  • 4 tbsp Greek yogurt
  • 1 egg
  • 2 tbsp oil
  • vanilla
  • butter for greasing the pans
  • white and dark chocolate
  • M & M candies , pretzels
Directions:
Preheat the oven to 180C. Grease two small doughnut pans.
Mix the flour, sugar, baking powder, soda and salt.
In a separate bowl, whisk the milk, egg, yogurt, oil and vanilla. Add the wet ingredients to the wet and mix. Pour the mixture between the pans and bake for 8-10'. Take the doughnuts from the pan and cool.
Melt the white and dark chocolate. Dip the doughnuts into the chocolate and let set. Make the eyes and mouth from the dark chocolate and decorate with candies and pretzels.

Crno beli kolač / Black And White Cake

Brzo se sprema, jedino vam trebaju dve konzerve od 400ml...

Potrebno za koru:

  • 125gr maslaca
  • 125gr šećera u prahu
  • 2 jaja
  • 100gr brašna
  • 25gr kakaa u prahu
  • 2 kašike mleka
za fil:
  • 75gr bele čokolade
  • 2 kašike mleka
  • 150gr maslaca
  • 125gr šećera u prahu
  • 2 kašike likera ili soka od  pomorandže
Priprema:
Zagrejte rernu na 180C. Dve konzerve obložite papirom za pečenje (i dno i strane).
Za koru,penasto umutite maslac i šećer u prahu. Dodajte jaja,umutite, a zatim dodajte i prosejano brašno i kakao. Dodajte i mleko i sve umutitte. Rasporedite masu u konzerve. Pecite ih oko 40'. Proverite štapićem za ražnjiće. Ostavite ih da se prohlade par minuta , pa ih izvadite iz kalupa i ostavite da se skroz ohlade. Ohlađene rolate iseći na kriške debljine 1cm.
Za fil, istopite belu čokoladu sa mlekom i ostavite da se prohladi. Umutite maslac i šećer u prahu, dodajte čokoladu i sok od pomorandže.
Kriške rolata mažite kremom i ređajte jednu za drugom. Ceo kolač premažite kremom i pospite rendanom ili seckanom čokoladom. Dobro ohladite. Pre služenja izvadite kolač pola sata ranije iz frižidera. Kolač sečete ukoso, da bi se dobio ovakav presek kao na slikama.

Black And White Cake

Ingredients for the sponge:
  • 125gr butter
  • 125gr powdered sugar
  • 2 eggs
  • 100gr flour
  • 25gr cocoa powder
  • 2 tbsp milk
for the filling:
  • 75gr white chocolate
  • 2 tbsp milk
  • 150gr butter
  • 125gr powdered sugar
  • 2 tbsp orange liqueur or juice
Directions:
Preheat the oven to 180C. Line bottom and sides of two cans with parchment paper.
Whisk butter and powdered sugar until fluffy. Add the eggs, whisk them and then add the sifted flour and cocoa powder. Finally add the milk and whisk all together. Divide the mixture between cans and bake for 40'. Use a wooden skewer to check if done. Cool for 5', then take them out of the can and cool completely. Cold sponge cut in 1cm thick slices.
For the filling, melt the chocolate and milk. Let it cool slightly. Whisk the butter and powdered sugar, add the melted chocolate and orange liqueur.
Spread the filling in cut slices and arrange them sequentially. Spread the filling on entire cake and sprinkle with grated or chopped chocolate. Chill. Take the cake from the fridge half an hour before serving. Cut in diagonal slices to serve.

FBI Rukavice - Mamina jela

U ovim FBI Rukavicama u gostima smo kod Željke. Njen blog Mamina jela je prepun fenomenalnih recepata, ali ja sam se nekako zalepila za njene kolače, tako da su moje rukavice ovoga puta - slatke. Željka, naravno, ima i puno odličnih recepata i za slana jela, testa, pite, pogače, ali ja nisam mogla da odolim njenim kolačima. Sva tri koja sam probala su savršeni. Obavezno svratite kod Željke, ja ću se vratiti sigurno opet.

Kolač sa orasima i belom čokoladom

Ovaj kolač sam odavno stavila među omiljenima još na Coolinarici, ali sad sam ga prvi put probala. I naravno da se kajem zbog toga. I kora i fil su savršeni. Pošto je kora bez brašna savršeno se stapa sa filom. Obavezno probati! Ja sam ga pravila u malo većem plehu, pa je zbog toga niži, ali verujem da to nije uticalo na njegov divan ukus.

Čokoladne medene toblerone

Ukus ovih kolačića mene podseća na moje omiljene bajedere, tako da će ovo biti još jedan kolač koji će biti često na repertoaru, naročito tokom praznika, slava, kada i spremam ovakve vrste.

Kakao kapućino kocke

Ovaj kolač se jako brzo sprema, nema mnogo petljanja oko njega, a nekako ima strukturu braunisa. Jak, zasitan kolač baš po mom ukusu. Ovde vam i skrećem pažnju na preliv, koji se odlično steže i seče, podseća na ganaš kremu, tako da vam može poslužiti ako u kući nemate čokoladu.

Jagode sa šlagom koji to nije / Strawberry And Cream

Ne volim šlag ni slatku pavlaku. Na tortama ih uvek gurkam u stranu, a ne volim ni klasične jagode sa šlagom. Zato ga uvek obogatim nekim dodacima, da ne bude onako otužan kao što jeste. Pošto jagode ubrzano prolaze smućkajte na brzinu ovu poslasticu (mada ni sa malinama ne bi bilo loše)...

Potrebno:
  • 200ml slatke pavlake
  • 50gr bele čokolade
  • 2 kašike kisele pavlake
  • sok od pola limuna
  • jagode
  • po želji šećer u prahu.
Priprema:
Istopite belu čokoladu i ostavite da se prohladi.
Umutite slatku pavlaku,dodajte kiselu pavlaku, sok od limuna i belu čokoladu. Ako vam nije dovoljno slatko dodajte malo šećera u prahu.
Ređajte u čašama red krema, red seckanih jagoda...Ohladite.

Straberry And Cream

Ingredients:
  • 200ml heavy cream
  • 50gr white chocolate
  • 2 tbsp sour cream
  • juice from half a lemon
  • strawberries
  • powdered sugar
Directions:
Melt the chocolate and let cool slightly.
Whip the cream, then add the sour cream, lemon juice and white chocolate. If necessary add some powdered sugar.
Arrange in glasses a layer of cream,then chopped strawberries...Chill.

Tiramisu keksići / Tiramisu Cookies

Vanilice,tiramisu,cheesecake.Moja top 3 slatkiša i to baš tim redom.Iz tog razloga nisam mogla da odolim keksićima koji u nazivu imaju reč 'tiramisu'...

Tiramisu keksići

Potrebno za testo:

  • 250gr brašna
  • 100gr šećera u prahu
  • 2 žumanca
  • 120gr maslaca
  • prstohvat soli
  • vanila
za fil:

  • 150gr krem sira
  • 1 kašika ruma
  • 1/2 kašičice nes cafe
  • 1 puna kašika šećera u prahu
i još:

  • bela čokolada
  • crna čokolada
  • kakao
Priprema:
Umutiti žumanca,maslac i šećer u prahu,dodati brašno,so i vanilu i umesiti testo.Uviti ga u foliju i ohladiti oko 30'.Zagrejati rernu na 200C.Ohlađeno testo razvući na pobrašnjenoj površini na debljinu 3-4mm i modlicom seći keksiće.Ohladiti ih još 10'.Peći ih oko 8-9' da ostanu beli.Ohladiti pre filovanja.
Za fil,rastvoriti kafu u rumu.Pomešati krem sir,rastvorenu kafu i šećer u prahu.Dobijenim filom spajati keksiće.Za glazuru,otopiti belu čokoladu,pa premazati keksić i posuti rendanom čokoladom i kakao prahom.Ostaviti da prenoće i omekšaju.

Tiramisu Cookies

Ingredients for the dough:

  • 250gr flour
  • 100gr powdered sugar
  • 2 egg yolks
  • 120gr butter
  • a pinch of salt
  • vanilla
for the filling:

  • 150gr cream cheese
  • 1 tbsp rum
  • 1/2 tsp nescafe
  • 1 full tbsp powdered sugar
and:

  • white chocolate
  • dark chocolate
  • cocoa powder
Directions:
Whisk the egg yolks,butter and sugar,then add the flour,salt and vanilla and knead the dough.Wrap it in the foil and chill for 30'.Preheat the oven to 200C.On a floured surface,roll the chilled dough to 3-4mm thickness and cut into desired shapes.Chill for 10'.Bake for 8-9' to  stay white.Cool before filling.
For the filling,dissolve the nescafe in rum.Mix the cream cheese,nescafe and powdered sugar.Spread the half of the cookies with filling and top with remaining cookies.
For the glaze,spread some melted white chocolate on top of the cookies and sprinkle with grated dark chocolate and cocoa powder.Leave them overnight to soften.

Lešnik bombice / Hazelnut Balls

I krećemo sa serijom sitnih kolača,jer je ipak vreme slava i praznika.Prvo vam predstavljam moje omiljene bombice.Jako su izdašne,bude ih baš punoooo.Doduše,ja i volim da su mi sitni kolači-sitni.Probajte,nećete zažaliti...

Potrebno:
  • 250gr maslaca ili margarina
  • 250gr mleka u prahu
  • 500gr šećera
  • 150gr mlevenih lešnika
  • 100gr mlevene plazme
i još:
  • oko 300gr bele čokolade
  • par kašika ulja
Priprema
Pomešati margarin i mleko u prahu (najbolje je umesiti rukama).Ušpinovati šećer sa malo vode.
Pomešati ove dve mase,pa dodati lešnik i plazmu.Sve dobro promešati i ostaviti da se ohladi.Od ohlađene mase oblikovati bombice.
Istopiti čokoladu sa malo ulja.
Umakati bombice u čokoladu i ostaviti da se stegnu.

Hazelnut Balls

Ingredients:
  • 250gr butter or margarine
  • 250gr powdered milk
  • 500gr sugar
  • 150gr ground hazelnuts
  • 100gr ground biscuits
and
  • about 300gr white chocolate
  • a few tablespoons of oil
Directions:
Mix the butter and powdered milk (using your hands is the better way).Cook the sugar with a little bit of water until syrupy.Mix this two mixture,then add the hazelnuts and biscuits.Mix all together and leave to cool.Shape it into small balls.
Melt the chocolate with the oil.
Dip each ball into the chocolate and let stand until chocolate firms.

Fudge sa belom čokoladom / White Chocolate Fudge

Odavno imam želju da probam fudge (ne znam kako bih ga prevela na srpski). I baš sam se obradovala kad sam u prodavnici zdrave hrane naišla na glukozni sirup,jer sam tačno znala gde ću ga iskoristiti.

Potrebno:
  • 500gr žutog šećera
  • 500ml slatke pavlake (nezaslađene)
  • 3 kašike glukoznog sirupa
  • 150gr bele čokolade
Priprema:
Čokoladu krupno iseći.Obložiti pleh 20x20cm papirom za pečenje.
U šerpi pomešati šećer,pavlaku i glukozu,staviti na srednju vatru i mešati da se šećer otopi.Kad se šećer otopi,pojačati vatru i pustiti da proključa.Smanjiti vatru na srednje jaku (kod mene na 4 od 6) i ostaviti da masa ključa oko 25-30'.Povremeno promešajte.Fudge je gotov kada ubacite malo u hladnu vodu i odmah se od nje formira loptica.Sklonite sa vatre i mešajte oko 5' da se malo prohladi.Ubacite čokoladu, promešajte i sipajte u pleh.Ohladite i ostavite da se stegne.Izvadite iz kalupa i isecite na kockice.Čuvati u zatvorenoj kutiji na sobnoj temperaturi.

White Chocolate Fudge

Ingredients:
  • 500gr golden caster sugar
  • 500ml heavy cream
  • 3 tbsp liquid glucose
  • 150gr white chocolate
Directions:
Cut the chocolate into chunks not too small.Line a square 20cm pan with parchment paper.
In a pan,mix the sugar,cream and glucose and slowly heat together stirring until the sugar melts.Turn up the heat and let it comes to a boil.Turn off the heat to medium and let it boils for 25-30',stirring from time to time.You will know the fudge is done,when you drop a small amount into a glass of cold water and it sets into a small ball.Remove from the heat and keep stirring for 5'.Sprinkle in the chocolate and stir.Pour into the prepared pan and let it cool and sets.Take it from the pan and cut into small cubes.Keep in an air container on room temperature.

Lava kolač sa belom i crnom čokoladom i sosom od malina / Lava Cakes With White And Dark Chocolate In Raspberry Sauce

Lava kolač sa belom i crnom čokoladom i sosom od malina

Potrebno:
  • 200gr bele čokolade
  • 50ml slatke pavlake (zaslađene)
  • 2 jaja
  • 90gr brašna
  • 50gr šećera
  • 1 kašika maslaca
  • 50gr crne čokolade (70% kakaa)
za sos:
  • 250gr malina
  • 2-3 kašike šećera
  • 1 kašika gustina
i još za podmazivanje:
  • maslac
  • brašno
Priprema:
Pomešajte maline sa šećerom,stavite na jaču vatru i prokuvajte par minuta.Gustin pomešajte sa 3 kašike hladne vode.Dodajte u maline u prokuvajte par minuta.Sklonite sa vatre i procedite da se otarasite semenki.Ohladite.
Zagrejte rernu na 220C.
Pomešajte belu čokoladu,pavlaku i maslac i zagrevajte na pari da se čokolada otopi i masa sjedini.Posebno umutiti jaja sa šećerom.U istopljenu čokoladu,dodajte umućena jaja i prosejano brašno.Umutite sve da nema grudvica.
Modle za sufle ili kalupe za mafine dobro podmažite maslacem i pospite brašnom.Sipajte masu do 2/3,pa ubacite po kockicu ili dve čokolade (zavisi od veličine).Pecite 11'.
Izvadite iz rerne,ostaviti ih da odmore minut-dva,pa ih izokrenute na tanjir i poslužite odmah uz sos od malina.

Lava Cakes With White And Dark Chocolate In Raspberry Sauce

Ingredients:
  • 200gr white chocolate
  • 50ml heavy whipping cream
  • 2 eggs
  • 90gr flour
  • 50gr sugar
  • 1 tbsp butter
  • 50gr dark chocolate (70% cocoa)
for the sauce:
  • 250gr raspberry
  • 2-3 tbsp sugar
  • 1 tbsp cornstarch
and for the ramekins:
  • butter
  • flour
Directions:
Mix raspberries with sugar and put on a higher heat to cook for a few minutes.Mix the cornstarch with 3 tablespoons of cold water,add it to the raspberries and cook for a few minutes.Remove from the heat and strain to remove the seeds.Cool.
Preheat the oven to 220C.
Mix the white chocolate,cream and butter and put on the steam until the chocolate is melted and mixture is smooth.In a separate bowl,whisk the eggs and sugar.In the melted chocolate add the whisked eggs and sifted flour.Whisk until there are no lumps.
Ramekins or muffin pan grease well with the butter and dust with flour.Pour the mixture until it reaches 2/3 of the ramekins.Insert one or two chocolate cubes (depending on the size).Bake for 11'.
Take it out from the oven,leave to rest a minute or two and then invert on the serving plate.Serve immediately with the raspberry sauce.

Tartići sa belom čokoladom i jagodama / White Chocolate And Strawberries Tarts

Možda ste već primetili da sam ja luda sa tartovima, i velikim i malim.Nekako su mi zgodni i praktični.Testo se može i zamrznuti,pa zatim po potrebi peći i filovati.Ovoga puta sam testo napravila i ispekla uveče,a ujutru samo nafilovala.Kombinacija prhkog testa,svilenkastog fila i sočnih jagoda mi se jako sviđala.
Ovo je još jedna moja ulaznica za igru AJME KOLIKO NAS JE!. Ovomesečna domaćica je Zoka,a tema su jagode.

Tartići sa belom čokoladom i jagodama

Potrebno za testo za 6 tartića:
  • 130gr brašna
  • 90gr hladnog maslaca
  • 3 kašike šećera
  • 1 žumance pomešano sa 3 kašike hladne vode
za fil:
  • 100gr bele čokolade
  • 250gr maskarponea
  • 100ml slatke pavlake (nezaslađene)
  • jagode
Priprema:
Pomešati brašno i šećer,pa dodati maslac i prstima napraviti mrvice.Dodati žumance i vodu i umesiti testo.Zaviti ga u providnu foliju i ohladiti u frižideru minimum 30'.Testo razvući u 6 malih plehova prečnika 10cm i izbockati ga viljuškom.Ohladiti ga 30'.Prekrijte ga papirom za pečenje i napuniti pasuljem ili pirinčem.Zagrejati rernu na 200C.Peći testo 10',skloniti papir i pasulj,pa peći još 9-10'.Pečene tartiće prohladiti i izvaditi iz kalupa,pa ih skroz ohladiti.
Za fil,na laganoj vatri mešati čokoladu i 100gr maskarponea da se sve sjedini,a čokolada otopi.Sloniti sa vatre pa dodati ostatak maskarponea i pavlaku.Sipati fil u korpice i ohladiti.Pre služenja rasporediti jagode.

White Chocolate And Strawberries Tarts

Ingredients for the pastry (6x10cm tart pans):
  • 130gr flour
  • 90gr cold butter
  • 3 tbsp sugar
  • 1 egg yolk mixed with 3 tbsp cold water
for the filling:
  • 100gr white chocolate
  • 250gr mascarpone
  • 100ml heavy cream
  • strawberries
Directions:
Stir the flour and sugar,add the butter and rub it with your fingertips until the mixture resembles coarse bread crumbs.Mix the egg yolk and water and knead the dough.Wrap and chill for at least 30'.Roll the dough into 6 tart pans and prick with the fork.Chill for 30'.Line the dough with parchment paper and fill with baking beans.Preheat the oven to 200C.Bake for 10',remove the paper and beans and bake for 9-10' more.Cool slightly and remove from the pans.Cool completely.
For the filling,on a lower heat stir the chocolate and 100gr of the mascarpone until melted.Remove from the heat,add the remaining mascarpone and the cream.Spread in the tart shells.Chill until set.Before the serving arrange the strawberries.

Cupcakes sa borovnicama i belom čokoladom/Blueberry and White Chocolate Cupcakes

Lično,mislim da je greh stavljati voće kao što su borovnice u kolače koji se termički obrađuju.Isuviše je to dragoceno i skupo voće,a bogami i sve ga je teže naći.Ako već imam sveže borovnice uvek ću ih radije dati deci da ih pojedu,nego ih stavljati u kolače.Izuzetak od tog pravila su ovi kolačići i to iz dva razloga.Prvo,zato što ih ovde ide jako malo,samo 100gr,a drugo,zato što su stvarno ukusni.Borovnice,testo je samo sa belancima,bademi i bela čokolada.Verujte mi,savršeno...Recept je iz knjige "Special Cupcakes".

Cupcakes sa borovnicama i belom čokoladom

Sastojci:
  • 150gr omekšalog maslaca
  • 150gr šećera
  • kora jednog limuna
  • 4 belanaca
  • 100gr borovnica (dobro oceđenih)
  • 75gr brašna
  • 120gr blanširanih mlevenih badema
za glazuru:
  • 175gr bele čokolade
  • 4 kašike slatke pavlake

Priprema
Zagrejati rernu na 180C.Staviti papirnate korpice u modle za mafine (12 komada).

Umutiti penasto maslac i šećer i dodati koru limuna.Borovnice pomešati sa jednom kašikom brašna,pa dodati u maslac zajedno sa ostatkom brašna i bademima.Posebno umutiti belanca u čvrst sneg.Dodati jednu kašiku belanaca u prethodnu masu i energično promešati,a zatim lagano dodati i ostatak belanaca i polako sve promešati.Sipati u korpice skoro do vrha.Peći oko 20-25' da lagano porumene.Ostaviti ih da se ohlade.Za glazuru,na pari otopiti čokoladu i pavlaku i ostaviti da se malo stegne.Obilno premazati kolačiće i ukrasiti po želji.Uživajte!

Blueberry and White Chocolate Cupcakes
Adapted from "Special Cupcakes"

Ingredients:
  • 150gr softened butter
  • 150gr caster sugar
  • finely grated zest of 1 lemon
  • 4 egg whites
  • 100gr blueberries
  • 75 gr plain flour
  • 120gr ground almonds
for icing:
  • 175gr white chocolate
  • 4 tbsp heavy whipping cream
Directions:
Preheat the oven to 180C.Line a 12-cup muffin tray with paper cases.
Beat the butter and sugar until creamy.Beat in the lemon rind. Dust the blueberries with one tablespoon of the flour.Stir the blueberries into the butter mixture with the rest of the flour and the almonds.In a seperate bowl,whisk the egg whites until standing in soft peaks.Mix in a spoonful of the whisked egg whites to soften the mixture before gently folding in the rest.Spoon the mixture into the paper cases almost to the top.Bake for 20-25' until golden and just firm to touch.Cool on wire rack.
To make the icing,put the chocolate and cream in a heatproof bowl over a pan of simmering water. Leave until the chocolate has melted,stiring until smooth. Remove the bowl and set aside until the icing has thickened sufficiently to spread over the cupcakes.Ice the cupcakes and decorate. Enjoy!
