Cheesecake sa belom čokoladom / White Chocolate Cheesecake

Ako volite cheesecake kao ja, bićete mi zahvalni na ovom receptu. Ne samo što je savršeno kremast, nego je i bez pečenja. Samo se umuti i dobro ohladi i to je sve!

Cheesecake sa belom čokoladom

Potrebno za koru:

  • 150gr mlevenog keksa
  • 60gr istopljenog maslaca
za fil:
  • 300gr bele čokolade (najbolje moguće)
  • 400gr krem sira
  • 150gr milerama
  • 1 kašičica vanile*
Priprema:
Pomešati keks i maslac i utisnuti u pleh prečnika 22-24cm. Staviti u frižider da se hladi dok pripremate fil
Istopite belu čokoladu (u mikrotalasnoj ili na pari). Ostavite je da se malo prohladi. Umutitte krem sir i mileram (žicom, ne treba vam mikser). Dodajte čokoladu i vanilu, lagano promešajte i sipajte preko kore. Dobro ohladite, najbolje preko noći.

* Ja koristim pastu od vanile, koju nabavljam iz inostranstva, a ako je nemam domaći ekstrakt od vanile koji sama spremam. Ako nemate ni jedno ni drugo, stavite vanilu koju koristite.

White Chocolate Cheesecake

Ingredients for the base:
  • 150gr ground biscuits
  • 60gr melted butter
for the filling:
  • 300gr best possible white chocolate
  • 400gr cream cheese
  • 150gr crème fraiche
  • 1 tsp vanilla*
Directions:
Mix the ground biscuits and butter and press the mixture into a 22-24cm round pan. Chill until you prepare the filling. Melt the white chocolate (in a microwave or in a double-boiler). Cool slightly. Whisk the cream cheese and crème fraiche. Add the chocolate and vanilla, mix gently and pour over the base. Chill well, preferably overnight.

* In my case vanilla paste or homemade vanilla essence.

Cheesecake kockice / Cheesecake Squares

Volite cheesecake,rado biste ga uvrstili na svoju tacnu sa sitnim kolačima, ali ne znate kako. OK, možete napraviti mini cheesecake, ali oni nisu dovoljno elegantni i nekako odudaraju od svih onih ostalih kolačića. Evo ideje...

Potrebno:

  • 250gr krem sira
  • 100ml slatke pavlake
  • 3 jaja
  • 100gr šećera
  • prstohvat soli
  • 1 kašičica vanile
i još:
  • istopljena čokolada*
Priprema:
Zagrejte rernu na 175C. Pleh dimenzija 20x20cm obložiti papirom za pečenje. Umutiti sve sastojke za cheesecake, sipati u pleh i peći oko 30-35'. Izvaditi iz rerne i potpuno ohladiti u frižideru, najbolje preko noći. Ohlađen cheesecake iseći na kocke, pa ih umakati u istopljenu čokoladu.* Po želji posuti seckanim pistaćima, lešnicima...ili prošarati belom, mlečnom čokoladom...

* Kockice možete ili umakati u istopljenu čokoladu za šta će vam trebati oko 300gr ili ceo cheesecake preliti čokoladom, a potom iseći na kockice, za šta će vam trebati oko 50gr.

Cheesecake Squares

Ingredients:
  • 250gr cream cheese
  • 100ml heavy cream
  • 3 eggs
  • 100gr sugar
  • a pinch of salt
  • 1 tsp vanilla
and
  • melted chocolate
Directions:
Preheat the oven to 175C. Line a pan 20x20cm with parchment paper. Whisk all the ingredients for the cheesecake. Pour into a pan and bake for 30-35'. Take it out from the oven and chill in the fridge, preferably overnight. Cut the chilled cheesecake into squares and dip them into the melted chocolate.* If desired, sprinkle with chopped pistachios, hazelnuts or decorate with melted white or milk chocolate.

* Chopped squares you can either dip into the melted chocolate (in which case you will need about 300gr of chocolate) or pour the 50gr of melted chocolate over the cheesecake and then cut into squares.

Cheesecake sa limunom i jagodama / Lemon and Strawberry Cheesecake

Potrebno za koru:

  • 200gr mlevenog keksa
  • 50gr istopljenog maslaca
  • 1,5 kašika šećera
  • 1,5 kašika limončela ili soka od limuna
za fil:

  • 500gr sitnog sira
  • 250gr maskarponea
  •  50gr šećera
  • 2 kašike meda
  • 3 jaja
  • kora i sok jednog limuna
 za preliv:

  • jagode
  • džem od jagode
Priprema:
Zagrejati rernu na 150C.Dno pleha prečnika 24cm obložiti papirom za pečenje.
Za koru, pomešati keks, maslac, šećer i limončelo i utisnuti u pleh. Staviti u fižider dok spremate fil.
Za fil, umutiti sve sastojke.* Sipati preko kore i peći oko 1 sat i 15 minuta. Na dno rerne stavite šerpicu sa vrelom vodom.
Kada je cheesecake pečen, izvadite ga iz rerne i oštrim nožem odvojite ga od ivica pleha, pa vratite u isključenu rernu sa odškrinutim vratima da se ohladi. Ohlađen kolač staviti preko noći u frižider.
Na ohlađen cheesecake poređajte jagode koje premažete sa malo zagrejanog džema.

*Cheesecake uvek spremam u multipraktiku. Sameljem sastojke za koru, prebrišem ga ubrusom, ubacim sastojke za fil, pulsiram nekoliko puta i cheesecake je gotov.

Lemon And Strawberry Cheesecake

Ingredients for the base:
  • 200gr ground biscuits
  • 50gr melted butter
  • 1,5 tbsp sugar
  • 1,5 tbsp limoncello or lemon juice
for the filling:
  • 500gr cottage cheese
  • 250gr mascarpone cheese
  • 50gr sugar
  • 2 tbsp honey
  • 3 eggs
  • grated zest and juice from one lemon
for the topping:
  • strawberries
  • strawberry jam
Directions:
Preheat the oven to 150C. Line a bottom of 24cm round pan with parchment paper.
For the base, mix the ground biscuits, butter, sugar and limoncello. Press it into the pan and chill while preparing the filling.
For the filling, whisk all the ingredients and pour over the base. Bake for 1 hour 15'. At the bottom of the oven put a saucepan with hot water.
When the cheesecake is baked take it out of the oven, using a sharp knife gently separate the cake from the pan and put it back in the oven to cool completely. Open the oven door slightly. Cool cheesecake chill over night in the fridge.
Arrange the strawberries on the cheesecake and brush them with a warm jam.

Brownie Cheesecake

Brownie Cheesecake

Potrebno za brownie:
  • 115gr maslaca
  • 115gr čokolade
  • 200gr šećera
  • 2 jaja
  • 50ml mleka
  • 115gr brašna
za cheesecake:
  • 500gr svežeg sremskog sira
  • 125gr šećera
  • 3 jaja
  • 125ml jogurta
  • vanila
Priprema:
Zagrejati rernu na 180C.Podmazati i posuti brašnom pleh prečnika 23cm.
Istopiti čokoladu i maslac,skloniti sa vatre pa dodati šećer,umućena jaja i mleko.Na kraju dodati prosejano brašno i sve umutiti tek toliko da se sjedini.Sipati masu u pleh i peći oko 25'.Izvaditi iz rerne i ostaviti da se hladi dok pripremate drugi deo.
Smanjiti temperaturu na 160C.
Za cheesecake,umutiti sir,šećer,jaja,jogurt i vanilu.Sipati sve preko kore u plehu i peći oko 45-55' tj. dok se sredina kolača stisne.
Oštrim nožem odvojiti ivice kolača od pleha i ostaviti kolač da se ohladi.Staviti ga u frižider na minimum 4 sata.

Brownie Cheesecake

Ingredients for the brownie:
  • 115gr butter
  • 115gr chocolate
  • 200gr sugar
  • 2 eggs
  • 50ml milk
  • 115gr flour
for the cheesecake:
  • 500gr soft cheese
  • 125gr sugar
  • 3 eggs
  • 125ml yogurt
  • vanilla
Directions:
Preheat the oven to 180C.Grease and dust with flour a 23cm round baking pan.
Melt the chocolate and butter,remove from the heat and add the sugar,beaten eggs and milk.Finally,add the sifted flour and mix just until blended.Pour into the prepared tin and bake for 25'.Remove from the oven while preparing the second part.
Reduce the oven temperature to 160C.
For the cheesecake,beat together the cheese,sugar,eggs,yogurt and vanilla.Pour over the brownie base and bake for 45-55' or until the centre is almost set.
Run a knife around the edge of the cake to loosen from the tin.Leave to cool.Chill in the refrigerator for at least 4 hours.

Cheesecake sa lešnik grilijašem/Hazelnut Praline Cheesecake

Ne znam za vas,ali ja ga obožavam.Volim ga i pečenog i nepečenog,voćnog,čokoladnog ili najobičnijeg,u čaši ili iz pleha...Kakav god da je,poješću ga i uživaću u tome.Šta?Cheesecake,naravno!


Cheesecake sa lešnik grilijašem

Potrebno za koru:
  • 200gr mlevenog keksa
  • 100gr otopljenog maslaca
  • 1 kašika šećera
za fil:
  • 900gr krem sira
  • 250gr šećera
  • 2 kašike brašna
  • 2 kašike slatke pavlake (nezaslađene)
  • 4 jaja
  • vanila
za grilijaš:
  • 150gr pečenog lešnika
  • 120gr šećera
  • 50ml vode
Priprema:
Najpre pripremite grilijaš.Namažite papir za pečenje sa malo ulja.Stavite na srednju vatru šećer i vodu i mešajte da se šećer otopi.Kad se šećer otopi,pojačajte vatru i kuvajte oko 5-6' bez mešanja.Kad se šećer karameliše,dodajte lešnike,promešajte i prebacite na papir.Ostavite da se ohladi.Ohlađen grilijaš podelite na dva dela.Jedan deo sameljite,a drugi grubo iseckajte.
Za koru pomešajte keks,maslac i šećer i utisnite u pleh prečnika 24cm.
Zagrejte rernu na 180C.
Za fil,umutite krem sir i šećer,pa dodajte brašno,slatku pavlaku i jedno po jedno jaje.Na kraju dodajte vanilu i samleveni grilijaš.Sipajte fil preko kore.Pleh obložite 2-3 puta (bolje 3)aluminijumskom folijom.Stavite ga u veći pleh koje ste do pola napunili ključalom vodom.Peče se oko 70-80'.Izvadite manji pleh iz većeg,skinite foliju i odvojite ivice kolača od pleha.Ostavite da se potpuno ohladi,a onda ga prebaciti u frižider preko noći.Na vrhu rasporedite grubo iseckan grilijaš.

Hazelnut Praline Cheesecake

Ingredients for the crust:
  • 200gr cookie crumbs
  • 100gr melted butter
  • 1 tbsp sugar
for the filling:
  • 900gr cream cheese
  • 250gr sugar
  • 2 tbsp flour
  • 2 tbsp heavy cream
  • 4 eggs
  • vanilla
for hazelnut praline:
  • 150gr toasted hazelnut
  • 120gr sugar
  • 50ml water
Directions:
First,make praline.Grease baking sheet.In a small saucepan,put water and sugar.Stir,,over a middle heat,until sugar dissolves.Rise the temperature and let it boil for 5-6',without stirring.Add hazelnuts,stir and pour onto prepared sheet.Let it cool until praline hardens.Divide it in two parts.One part grind to powder and another part coarsely crushed.
For the crust,mix cookie crumbs,butter and sugar.Press it into a 24cm springform pan.
Preheat the oven to180C.
For the filling,mix with your electric mixer cheese and sugar.Then add flour,cream and eggs,one at a time.Finally,add vanilla and praline powder.Pour filling over crust.Wrap outside of the pan with 2 or 3 layers (better 3) of heavy-duty foil.Place cake pan in a roast pan.Pour enough hot water into roasting pan to come halfway up sides of cake pan.Bake about 70-80'.Take the cake pan out of the water,take off foil and cut around sides of pan to loosen cake.Cool completely and chill overnight.Arrange coarsely crushed praline over the top.
