Karamelizovan puding od pirinča / Caramelized Rice Pudding

Ja sam odrasla na sutlijašu. Pored koha to je poslastica koju je mama najčešće spremala. I ja sada volim da ga spremam. Ali ako hoću nešto malo prefinjenije, onda pravim puding od pirinča. Ovoga puta sam zdipila ideju sa net-a i karamelizovala ga. Odlična kombinacija - hladan puding sa vrućom šećernom koricom. I definitivno mi je sledeća investicija jedan mali kuhinjski brener. Karamelizovan puding od pirinča

Potrebno:
  • 200gr pirinča
  • 100gr suvog grožđa
  • 170gr šećera
  • 30ml ruma
  • 500ml mleka
  • 250ml slatke pavlake (nezaslađene)
  • 60gr maslaca
  • 4 žumanca
  • vanila, cimet,prstohvat soli
  • + nekoliko kašika šećera
Priprema:
Potopiti suvo grožđe u rum, dodati dve kašike šećera,150ml vode i staviti na vatru da proključa. Skloniti sa vatre, ostaviti da stoji 20' pa ga procediti.
Oprati pirinač, staviti ga u šerpu sa mleko,pavlakom i prstohvatom soli , staviti da proključa, smanjiti vatru i kuvati da pirinač omekša i upije tečnost. Posebno umutiti maslac i ostatak šećera od 170gr ,pa dodati žumanca i sve umutiti. Dodavati malo po malo vruć pirinač i mešati sve vreme. Dodati cimet,vanilu i suvo grožđe. Masu sipati u posudice i staviti u frižider da se potpuno ohlade.
Pre služenja posuti svaku posudu sa jednom kašikom šećera i staviti ispod grila da se karamelizuje. Poslužiti odmah.

Caramelized Rice Pudding

Ingredients:
  • 200gr rice
  • 100gr raisins
  • 170gr sugar
  • 30ml rum
  • 500ml milk
  • 250ml heavy cream
  • 60gr butter
  • 4 egg yolks
  • vanilla, cinnamon, a pinch of salt
  • + a few tablespoons of sugar
Directions:
Cover the raisins with the rum, add 2 tablespoons of sugar, 150ml of water and bring to boil. Remove from the heat and let stand for 20'. Drain.
Wash the rice, put in the pan along with the milk, cream and a pinch of salt and bring to boil. Lower the heat and cook until the rice is tender and all the liquid is absorbed.
In a bowl, whisk the butter and the rest of sugar (from 170gr), add the egg yolks and whisk all together. Add  the hot rice pudding a little at the time stirring all the time. Finally add the cinnamon, vanilla and raisins. Pour the mixture into small ramekins and chill until it's completely cold.
Before the serving, sprinkle each ramekins with a tablespoon of sugar and put under the grill to caramelized. Serve immediately.

  2. Sjajno. Juče sam pravio sutlijaš u kombinaciji sa pudingom od vanile. Nije ispalo loše, ali ovo karamelizovano mi se više sviđa...
