Palačinke Sote Stroganof / Beef Strofanoff Crêpes

Omiljeno jelo mog dragog je sote stroganof.Ovoga puta sam naletela na recept gde je sote upakavan u palačinke.Fenomenalno!

Palačinke Sote Stroganof

Potrebno:
  • 400gr govedine
  • 350gr šampinjona
  • 1 crni luk
  • 500ml supe
  • 2 kašike paradajz pirea
  • 1 kašika vorčester sosa
  • 1/2 kašičice majčine dušice
  • 120gr kisele pavlake
  • 1/2 kašičice senfa
  • malo rendanog kačkavalja
  • ulje,brašno,so,biber
  • 8 palačinki
za sos:

  • 120gr kisele pavlake
  • 2 kašičice senfa
  • 1 kašičica limunovog soka
  • 1/2 kašičice rendane limunove kore
  • so,kajenski biber
Priprema:
Najpre pomešati sve sastojke za sos i ostaviti na sobnoj temperaturi oko 30'.
Za sote,iseckati šampinjone na listiće,a meso na tanke trakice. Na malo ulja,ispržite šampinjone da ispari tečnost koju puste. Posoliti ih i pobiberiti. Izvaditi iz tiganja,a u istoj masnoći (dodati još malo ulja ako je potrebno),ispržiti sitno seckan crni luk. Izvaditi ga i pomešati sa šampinjonima. Pomešajte malo brašna sa solju i biberom. Uvaljati meso u brašno i ispržiti u istom tiganju da dobije boju sa svih strana. Pomešati i meso sa šampinjonima. U istom tiganju koji je na srednjoj vatri,dodati paradajz pire i kratko ga propržiti. Naliti supu i pustiti da ključa nekoliko minuta da supa malo ispari i da se zgusne. Ubaciti vorčester, senf,majčinu dušicu,a na kraju i kiselu pavlaku. Vratiti meso,šampinjone i luk i kuvati sve oko 15'. Po potrebi,posoliti i pobiberiti.
Zagrejte rernu na 220C. Podmažite pleh za pečenje.
Rasporediti fil između palačinki,uviti svaku i poređati gusto u pleh. Posuti rendanim kačkavaljem i peći oko 10'.
Poslužiti uz sos od pavlake i senfa.

Beef Stroganoff Crepes

Ingredients:
  • 400gr beef
  • 350gr white button mushrooms
  • 1 onion
  • 500ml stock
  • 2 tbsp tomato paste
  • 1 tbsp Worchestershire sauce
  • 1/2 tsp thymme
  • 120gr sour cream
  • 1/2 tsp mustard
  • grated cheese
  • oil,flour,salt ,pepper
  • 8 crêpes
for the sauce:
  • 120gr sour cream
  • 2 tsp mustard
  • 1 tsp lemon juice
  • 1/2 tsp grated lemon zest
  • salt,cayenne pepper
Directions:
First,make the sauce. Mix all the ingredients and let stand at room temperature for at least 30'.
Sliced the mushrooms, cut the beef into thick stripes.Heat some oil in a skillet and fry the mushrooms until their liquid evaporates. Season with salt and pepper. Take it out from the skillet and put into a bowl. In the same skillet cook the finely chopped onion until soft.Remove from the skillet and transfer to the bowl with the mushrooms. Mix some flour with salt and pepper. Toss the beef with the flour and put into the skillet over the medium-high heat until browned on both sides. Transfer to the bowl with the mushrooms.
In the same skillet,add the tomato paste and cook for a few seconds. Add the stock,bring to the boil and cook until the stock has reduced.Add the Worchestershire, mustard,thyme and then whisk the sour cream. Return the mushrooms,onion and beef to the sauce and simmer gently for 15'. If necessary, season with salt and pepper.
Preheat the oven to 220C. Butter the bottom of a baking dish.
Divide the stroganoff filing between crepês and roll them into cylinders.Arrange them into the baking dish and sprinkle with grated cheese. Bake for 10'.
Serve with sour cream/mustard sauce.

Palačinke sa pečurkama i plavim sirom

Opet jedna bezmesna ideja za ručak...



Palačinke sa pečurkama i plavim sirom

Potrebno:

  • 8 palačinke
  • 1 crni luk,sitno seckan
  • 700gr paradajza,sitno seckan ili samleven
  • 1 kašika paradajz pirea
  • 300gr šampinjona,seckani na listiće
  • 1 kašika brašna
  • 200ml mleka
  • 100gr plavog sira
  • ulje,so,biber,peršun,šećer
Priprema:
Na malo ulja ispžiti sitno seckan crni luk.Dodajte paradajz pire,promešajte i ubacite paradajz.Poklopite i kuvajte na srednjoj vatri oko 10'.Sklonite sa vatre i dodajte so,biber i prstohvat šećera.
Pečurke ispržiti na malo ulja.Kada voda ispari,dodajte brašno,promešajte i nalijte mleko i 150ml vode.Pustite da provri,pa dodajte mrvljen plavi sir i kuvajte da se sir otopi.Sklonite sa vatre i posolite i pobiberite.
Na dno vatrostalne posude,stavite malo paradajz sosa.Svaku palačinke premažite istim sosom,pa zavijte u rolat ili trougliće.Poređajte palačinke u posudu i prelijte sosom od pečuraka i sira.Pecite u zagrejanoj rerni na 200C oko 15'.Izvadite iz rerne i pospite seckanim peršunom.


Crepes With Mushrooms And Blue Cheese

Ingredients:

  • 8 crepes
  • 1 onion,finally chopped
  • 700gr tomatoes,finally chopped or minced
  • 1 tbsp tomato paste
  • 300gr champignons,sliced
  • 1 tbsp flour
  • 200ml milk
  • 100gr blue cheese
  • oil,salt,pepper,parsley,sugar
Directions:
On a little oil,cook the onions until tender.Add the tomato paste,stir and add the tomatoes.Cover and cook on a middle heat for 10'.Remove from the heat and add the salt,pepper and a pinch of sugar.
Fry the mushrooms in a little oil.When the liquid evaporates,dust the mushrooms with the flour,stir and pour the milk and 150ml of water.Let it boils,then add the crumble cheese and cook until it's melted.Remove from the heat,add the salt and pepper.
At the bottom of the casserole, spread some tomato sauce.On each crepe spread the same sauce and roll it jelly style or fold it in a triangle. Arrange the crepes it the casserole and pour the mushroom and cheese sauce over it.Bake in the preheated oven to 200C about 15'.Take it out of the oven and sprinkle with chopped parsley.

Italijanske palačinke / Italian Crêpes

Za mene,palačinke,pica i burek moraju biti vrući kad se jedu.Ne mlaki,ne topli,nego vreli.Zato imam problem kad pravim palačinke,jer imam jako malo vremena da uživam u njima.Zbog toga uvek tragam za receptima kako upotrebiti palačinke da bi opet bile jestive za mene.
Ne znam da li su ovo stvarno italijanske palačinke,ali ja imam pod tim nazivom i često ih spremam.Pročitajte recept pa ćete videti zašto...

Italijanske palačinke

Potrebno:
  • 10 palačinki
  • 1 šolja (2dcl) šećera
  • 1/3 šolje vode
  • 2 kašike maslaca
  • 1 šolja džema od kajsije
  • 2 kašike soka od limuna
  • 1/4 šolje sveže ceđenog soka od pomorandže
za serviranje:
  • sladoled ili šlag
  • seckani bademi,lešnici...
Priprema:
Palačinke smotajte u rolnu,pa ih isecite na trake i prebacite u činiju.
Za preliv,pomešajte sve sastojke i prokuvajte da se sve sjedini i zagreje.Prelijte preko palačinki i promešajte.Servirajte na tanjir i dodajte sladoled i orašaste plodove ili karamelizovane lešnike u mom slučaju.Služiti odmah.

Italian Crêpes

Ingredients:
  • 10 crêpes
  • 1cup (2dcl) sugar
  • 1/3 cup water
  • 2 tbsp butter
  • 1 cup apricot jam
  • 2 tbsp lemon juice
  • 1/4 cup freshly squeezed orange juice
for serving:
  • ice-cream or whipped cream
  • chopped almonds,hazelnuts...
Directions:
Roll the crêpes like a cylinder,cut them into the ribbons and transfer to the bowl.
For topping,mix all the ingredients and put it on the heat to combine and become hot.Pour it over the crêpes and mix all together.Serve it on the plate and top with ice cream and nuts or caramelized hazelnuts,like I did.Serve right away.
